Some people love every part of bread—they wouldn’t leave a single crumb behind. Our group leader, however, prefers the crust. To satisfy Agathe’s culinary demands, David seeks help from a baker to make the “hollowest” bread possible. The technique used: creating the largest possible air pocket inside the bread to minimize the crumb. In the lab, a true glassblower will reveal the elastic power of yeast and gluten! Finally, to get the testers out of the kneading trough, Vincent takes on the challenge head-on! Will our apprentice baker find the perfect recipe for a crumb-less baguette?
